Fernando Pensato’s “Private Collection” extra virgin olive oil – as used in the Suvretta House kitchen by Executive Chef Fabrizio Zanetti.

The olive groves of Pensato are situated on the gentle slopes of the Apulian hills, where Frederick II once lived.

The climate of this region and the quality of the soil provide ideal conditions for the optimal growth and ripening of Peranzana olives.

The Peranzana is a juicy olive with firm flesh that yields oil of particularly high quality. The olives are hand-picked as soon as they are ripe, then carefully selected, cleaned and cold-pressed in pink granite mills to uphold tradition. Thanks to its very low acidity (0.2%), our precious extra virgin olive oil is absolutely delicious!
